Coffee Dijon Chicken


The sauce on this chicken - inspired by a recipe from BudgetBytes - is crazy good. This sauce could go on ANYTHING and make it more delicious. Chicken? Check! Veggies? Check! Pizza? Check! Ice cream? Magic 8 ball says "Signs point to yes!"


  • 2 Tbsp Coffee Syrup
  • 1/4 cup dijon mustard
  • 1 Tbsp olive oil
  • 2 tsp soy sauce
  • 1 clove garlic
  • 1/2 Tbsp rosemary (dried or fresh)
  • ~ 6 chicken thighs

Preheat oven to 375 degrees. In a small bowl, stir together the Dijon mustard, Coffee  Syrup, olive oil, and soy sauce. Mince the garlic and chop the rosemary.  Stir both into the marinade. 

Coat the inside of a casserole dish (or cast iron skillet) with non-stick spray. Arrange chicken thighs so that they are close, but not overlapping. Pour on marinade, being sure to coat each piece. 

Bake for 45-50 minutes, or until cooked through. Spoon some pan drippings over the thighs. Set oven to broil and return them to the oven for about 5 minutes, or until the top of the chicken is golden brown.
