This Corned Beef gets drunk on beer, then sobers up with coffee, just like most of us on St. Patrick's Day. But it comes out so tender, juicy and delicious - and is so easy to make - you'll want it all year round!
INSTANT POT BUZZY CORNED BEEF
Mix Coffee Syrup and brown sugar together to make a paste, then rub on beef. Place brisket into Instant Pot and sprinkle on the spice packet. Pour a can of Guinness beer in and add a few onions. Pressure cook on high for 90 minutes, then quick release. Remove beef from pot (leaving liquid), set on a platter and cover to rest and keep warm (like a child :)
Add other veggies to the pot - cabbage, carrots, potatoes (I like both red and sweet potatoes), etc. Pressure cook for 5 minutes and quick release.
CROCK POT VERSION:
You can also make this in a crock pot and slow cook for 8 hours, just add the potatoes and carrots at the beginning. Add cabbage after 6 hours to cook with everything else for the last 2 hours.
